When I convert to PDF using Prince, my images are bigger than they are in my html. Is there a way to automatically resize all images to a max height/width?

You can use the width/height properties in CSS.

I would suggest using a blanket css rule for this and set max-width:100%, that way the images will not go past page/region boundaries
