can I use Prince to create lots of invoices through a rest-host? Are there limits (max. amounts of concurrent creations etc.)

Limited only by server speed / available memory.

can i call prince.exe via multiple threads simultaneously?

Yes, separate Prince processes do not share any state and will not interfere with each other.
