How do I make apostrophes in my html appear normal in my pdf? They work fine on my local Mac OSX, but appear as three junk chars on my Centos Linux server.

When they work fine, do you mean when you view the PDF on MacOS X, or when you run Prince on MacOS X?
Are you disabling font embedding? What fonts are you using?
Unfortunately there is no user-interface option to make apostrophes work properly, as they are supposed to work properly by default.

I just figured it out - I had some bad apostrophe's, quotes, and hyphens from an Open Office doc that I simply cut and paste into an html doc. They looked fine in the text editor, but didn't appear properly in the pdf. Replacing all those with the regular ascii chars fixed it.
